end of a chapter
for those of you “in the know”, i worked as a sushi chef/assistant for the past two months at citrus bar and grill on 75th and amsterdam and July 16th 2009 was the conclusion of a memorable experience. working in a restaurant is definitely not a profession i desire but within the two arduous months i gained an admiration for every one of the workers. we are so fucking lucky. can you survive on minimum wage? maybe support a wife? couple of kids? work twelve plus hours standing on your feet? sometimes we need to view everything we own including homes, parents, music and etc. by all means this is not the only humbling escapade i’ve experienced but it is definitely the most recent; it is something that all of us need to experience. from my eczema scarred fingers to a conquered fear of raw meat to the repugnance of a zagat rated restaurant i have a newfound appreciation for the restaurant business. i remember the first day walking into work and sitting down with the sou chef and manager: “do you have what it takes? are you sure you can do this?” kevin beamed. i nodded silently but the definitive answer is no and probably not. i learned a great deal but i am not cut out for the restaurant world. in the end i realized my love for gastronomy. i’ll just play kitchen in the security of my home.
